Baked Reuben with layers of corned beef, sauerkraut, and Swiss cheese

🧑‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch (23×33 cm) baking dish.

  2. Layer half the rye bread in the bottom of the dish. Press lightly.

  3. Spread half of the dressing over the bread.

  4. Add a layer of chopped corned beef, then evenly spread the sauerkraut on top.

  5. Sprinkle half the cheese, then repeat all layers: bread, dressing, beef, sauerkraut, and finish with cheese.

  6. Brush the top with melted butter (optional) and sprinkle with caraway seeds if using.

  7. Cover with foil and bake for 20 minutes.

  8. Remove foil, then bake an additional 10–15 minutes until cheese is bubbly and slightly golden.

  9. Let rest 5–10 minutes before cutting. Serve warm with extra dressing on the side.

🥄 Optional Homemade Russian Dressing:

  • 1/2 cup mayonnaise

  • 2 Tbsp ketchup

  • 1 tsp horseradish

  • 1/2 tsp Worcestershire sauce

  • Salt and pepper to taste

Mix until smooth. Keeps in fridge for about a week.
