Ingredients

1 large head cauliflower, cut into florets
2-3 tablespoons (30-45ml) avocado oil, divided
1 teaspoon sea salt
1 tablespoon curry powder
½ teaspoon maple syrup (optional)
Optional Garnishes:
Fresh cilantro
Toasted almonds
Tahini drizzle
Instructions
Preheat oven to 450°F (232°C).
Cut cauliflower into even-sized florets.
Toss with 1 tablespoon oil, salt, curry powder, maple syrup.
Heat skillet with remaining oil until very hot.
Sear cauliflower 5 minutes until golden.
Transfer to oven, roast 10-15 minutes.
Stir every 5 minutes until crispy.
Garnish and serve immediately.
