Ingredients
12 ounces penne pasta
3 cups cubed boneless, skinless chicken breasts
Salt and pepper to taste
1 large red bell pepper diced
1 medium onion diced
3 cloves garlic minced
2 tablespoons vegetable oil divided
3 tablespoons butter
¼ cup all-purpose flour
2 cups chicken broth
1 cup heavy cream
1 cup milk
1 teaspoon dried thyme
½ teaspoon salt

½ teaspoon dried rosemary
¼ teaspoon black pepper
3 cups shredded Colby Jack cheese
Chopped fresh parsley for garnish optional
