How To Make Deli-Style Chicken Salad
Step 1:
Lightly coat diced chicken breasts and thighs with olive oil. Season with granulated onion, sea salt, and cracked black pepper.
Step 2:
Place seasoned chicken in a baking dish and loosely cover with aluminum foil. Bake at 350°F (175°C) for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).
Step 3:
Let the chicken cool for 10 minutes, then refrigerate for at least 1 hour. Once chilled, dice chicken into bite-sized pieces (about ¼-inch thick and ½-inch wide).
Step 4:
In a large bowl, combine the diced chicken, celery, and mayonnaise. Stir until well coated.
Step 5:
Cover and refrigerate for 1–2 hours (or overnight) to allow flavors to meld. The flavor improves the longer it sits.
