My husband loves this meal for a weeknight dinner!

Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, add the olive oil and cook the sausage until browned, breaking it up into crumbles as it cooks.
Add the chopped onion and sliced bell peppers to the skillet. Cook until the vegetables are tender, about 5-7 minutes.
Stir in the garlic powder, dried oregano, salt, and pepper. Mix well to combine.
Divide the sausage and pepper mixture evenly into two individual-sized aluminum foil pans.
Top each pan with shredded mozzarella  cheese, spreading it evenly over the surface.
Sprinkle the grated Parmesan  cheese on top for an extra cheesy crust.
Place the pans in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and golden brown.

Remove from the oven and let cool slightly before serving.
Variations & Tips
For a spicier kick, use hot Italian sausage or add a pinch of red pepper flakes to the mixture. You can also experiment with different cheeses like cheddar or provolone for a unique flavor twist. If you prefer more vegetables, throw in some mushrooms or zucchini slices. To make this dish even more convenient, prepare the sausage and pepper mixture ahead of time and store it in the fridge until you’re ready to assemble and bake.
