My Mexican friend showed us this recipe, and we’ve been eating it on repeat since!
1/4 cup of salsa
1/4 cup of cheddar cheese, shredded
sour cream, 1/2 cup (not required)
4 cups of tater tots, frozen
What to do
To begin, bring the oven temperature up to 375 degrees Fahrenheit (190 degrees Celsius).
2. Brown the ground beef in a large pan over medium heat. Remove any surplus of fat.
3. When the onions become translucent, add the minced garlic and chopped onion to the pan and continue cooking.
Step 4: Combine corn, black beans, salsa, taco spice, and stir. Stir periodically while it cooks for another 5 minutes.
Fifth, butter a 9-by-13-inch baking dish and transfer the meat mixture to it. Distribute uniformly across the base.
6. Top the beef mixture with shredded cheese.
7. Evenly distribute the tater tots over the cheese.
8. Preheat oven to 25-30 minutes, or until tater tots are crispy and golden.
9. Top with sour cream if desired and serve hot.
Changes and Hints
Substitute ground turkey or a meatless crumble for the beef if you’re catering to vegetarians or have fussy eaters in your household. To make it spicy, try combining Monterey Jack and pepper jack with cheddar instead. If you want things with a little more heat, you may add chopped green chilies or jalapeños on top.
