Sheet-Pan Pork Chops with Multi-Colored Potatoes:

Combine the multi-colored potatoes, after halving them, with 1 tablespoon of olive oil, garlic powder, rosemary, salt, and pepper in a big bowl. Evenly distribute the potatoes onto the baking sheet.
Get the pork chops ready:
Onion powder, paprika, salt, and pepper, together with the remaining olive oil, coat the pork chops on both sides. Coat the pork chops equally with the spice by rubbing it into them.
Lay out on a baking sheet:
In between the potatoes, arrange the seasoned pork chops on the baking sheet.
Preheat oven to bake:
Cook the pork chops in the oven for 25 to 30 minutes, or until they are 145 degrees Fahrenheit (63 degrees Celsius), for medium-rare, and the potatoes are soft and browned.
Grilling is an option:
Broil the pork chops and potatoes for the last two or three minutes of cooking if you want them with a bit more crunch.
Present with a garnish:
After taking the baking sheet out of the oven, top with fresh parsley if you want, and then serve the pork chops beside the roasted potatoes with different colors.
