Ingredients:
1 cup graham cracker crumbs (for crust)
2 tbsp melted butter (for crust)
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup sour cream
2 tbsp all-purpose flour
¼ cup heavy cream
¼ cup superfine sugar (for the brûlée topping)
Instructions:
Prepare the Crust:
Preheat your oven to 325°F (163°C).
In a bowl, mix the graham cracker crumbs with melted butter until well combined.
Press about 1 tablespoon of the mixture into the bottom of lined cupcake molds.
Bake for 5 minutes, then remove and set aside to cool.
Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy.
Add the eggs one at a time, mixing well after each addition.
Mix in the vanilla extract, sour cream, and flour until the batter is well combined and smooth.
Pour in the heavy cream and mix until incorporated.
